Tiong Bahru Hawker Market

Phil’s journey through Singapore begins with one of its most famous offerings, a hawker market. Bjorn Shen is a great chef and judge on MasterChef: Singapore and shows Phil around all the different stalls of the market. Bjorn shows Phil the art of eating and enjoying a plate of duck rice, they grab some sugar cane juice, and finally a very traditional dish called watercake.

Candlenut

Phil’s next stop explores Peranakan cuisine, which is the indigenous cuisine of Singapore. Phil is joined by food writer and chef, Annette Tan at a beautiful restaurant named Candlenut, which is the first Peranakan restaurant to receive a Michelin star. Phil learns about Peranakan culture and enjoys a feast of food including a beautiful fresh salad, chicken curry, and buah keluak which is a traditional “mole-like” dish made from Peranakan tree nuts.

The Raffles Hotel - Long Bar

Phil’s tour of Singapore leads him to The Raffles Hotel, which is the birthplace of the world-renowned drink, the Singapore Sling. Phil is joined by bartender Rodolpho as he gets a lesson on how to make one of the famous cocktails. Phil even gets a turn to crank the famous shaker machine as he makes some “Slings” for the whole crew.

Burnt Ends

Phil’s next stop is at Australian chef, David Pynt’s restaurant, Burnt Ends. Phil is joined by the owner of Burnt Ends, Loh Lik Peng for a decadent and incredibly tasty menu of fire roasted food. The meal included smoked quail egg and caviar, taramasalata crostini, beef marmalade and pickles, king crab with brown butter, and a 78 day aged monster steak. Oh, and for dessert? A pulled pork sandwich.

Maxwell Hawker Center

Phil is joined by chef Damian D’Silva for some more exploration of Singapore’s hawker markets. This time, Phil and Damian are on the hunt for Singapore’s national dish, chicken rice. Damian teaches Phil his way of eating chicken rice as they sit in the middle of the busy market.

Changi Village

Phil’s hawker market crawl doesn't stop there, because he meets Singaporian food king KF Seetoh at Changi Village for some more hawker market favorites. Phil and KF are seeking the traditional Malay dish, nasi lemak. In this “nasi lemak war zone,” they enjoy a number of different styles from a bunch of different stalls. Although nasi lemak can come with many different fried goodies, they both agree the real stars are the coconut rice and the chili paste.

Artichoke

On the last stop of his trip, Phil meets back up with chef Bjorn at his restaurant, Artichoke which specializes in middle eastern food with a Singaporean twist. Phil is also joined by new friends Damian, KF, and the local fixer Milton. They enjoy a number of small dishes including roasted eggplant, crab suzuki, cuttlefish shawarma, and green harissa prawns.
