Gasoline Grill

While Klaus Wittrup was working in Jackson Hole, Wyoming, he fell in love with the juicy American burger. Klaus created his own burger stand, the Gasoline Grill, a gas station themed restaurant. Phil tries the Whataburger–a burger topped with butter.

Tivoli Gardens

Tivoli Gardens was built in 1843 and is one of the world’s first amusements parks. Phil takes his family there to celebrate his daughter Lily’s birthday.

Balderdash

Balderdash Geoffrey Canilao the owner serves cocktails and shots at his bar. The Rosio (of Hija de Sanchez) and Laura cocktail is a blended avocado beverage with freeze dried raspberries and crispy grasshoppers on top. They also have a banana split infused with alcohol and drizzled with beaver castoreum/gland whipped cream and seaweed chocolate syrup.

Phil heads to Dop to try all seven hot dogs including the classic, garlic, vegetarian dog, chicken, spicy beef with spicy ketchup, pork with cheese, and goat sausage with bacon.

Hija De Sanchez

NOMA’s Rosio Sanchez brought Hija de Sanchez to Copenhagen. She makes tacos with most ingredients found locally and only a few ingredients from Mexico. The cheese is from Copenhagen and gooseberries are used in place of tomatillos for their tart flavor.

Freetown Christiania

Freetown Christiania sounds like a hippie’s paradise. Phil heads there with Matt Orlando. The community is formed by hippies and squatters living in a self-sustaining community. Freetown has been around since 1971.

Matt takes Phil to a falafel cart located within Christiania for the best falafels in town. Get around on a Christiania cargo bike.

Fiskebaren

Fiskebaren is located in the meatpacking district. Anders Selmer, owner of Fiskebaren, takes him on a boat ride to the restaurant and they have oakwood smoked fish and chips and local oysters.

Amass

Phil is joined by his family for Ben’s (his son) birthday and they head over to visit Matt Orlando. Matt is a chef from San Diego, California. Amass is influenced by what’s grown near the restaurant. Phil begins his visit exploring the farmland. They run through a field of alfalfa, taste yarrow flowers, and eat a salad from the palm of his hand. In the kitchen, Matt and Phil create fried chicken from scratch using ingredients from the farmland, and a dish made with Douglas fir pine oil and a collection of Phil’s frolicking flowers.

Barr

Barr is a restaurant by Chef Thorsten Schmidt. Phil tries baked cod fish that is bacon glazed 14 times. They also try frikadeller–Danish meatballs.

Amann’s Deli

Phil meets Marie Olesen at Aamann’s Deli. They order a few smørrebrød (small open face sandwiches) and take them to the park. Chef Adam Aamann creates fresh and flavorful smørrebrød.
